Welcome back to……Food & Love. I started this new series last month to document my culinary journey as I try to improve my kitchen skills. I’ll be sharing with you some quick and easy recipes from friends and family. I’ll try to cook or bake these recipes, and hopefully make something edible for my hubby.
Today, I’ll be making two loaf pans of Zucchini Bread!
I would like to thank Joe and his lovely wife Denise for sharing the recipe with us. Joe doesn’t bake, but he often brings to our workplace a lot of delicious goodies made by Denise. This is one of my favorites, and I’m so excited to learn how to bake it!

- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp. vanilla
- 2 cups grated zucchini (with skin)
- 2 cups flour
- 2 tsp. baking soda
- 1/4 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 cup walnuts (optional)
- Blend together eggs, sugar, vegetable oil, and vanilla.
- Add 2 cups grated zucchini.
- Blend in flour, baking soda, baking powder, salt, cinnamon, and walnuts.
- Grease and flour 2 loaf pans.
- Bake at 350 degrees for one hour.
My hubby volunteered to grate the zucchini while I prepared all the other ingredients. He seemed amused that I’m serious about learning how to bake and he’s been very supportive. Plus, he loves baked treats, and he’s happy to be the first one to try whatever I make!
I’m glad the zucchini bread turned out really good. Mmmm… perfect with a cup of tea or coffee!
