Carrot Cake with Cream Cheese Frosting

My hubby loves to cook. He doesn’t need a recipe to create a delicious meal. Sometimes, he’ll make something out of whatever he finds in the fridge, and voila, another savory dish!

I’m the exact opposite, I need a recipe to cook or bake anything. I also need a lot of luck to make something tasty. Thus, he has been doing most of the cooking. A few weeks ago, he told me, “Cooking is my way of expressing my love for you!”

Aww! My heart melted when he said that. And, I thought of improving my cooking and baking skills. It would be nice to surprise him with a delicious dish or dessert that I made.

Today’s challenge is baking my first Carrot Cake. I thank my very generous and supportive friend Sue for sharing her recipe with us.

Carrot Cake with Cream Cheese Frosting

Ingredients:

  • 1  1/2 cups of oil
  • 4 eggs
  • 2 cups sugar
  • 3 cups grated carrots
  • 1/2 cup chopped walnuts
  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp, cinnamon
  • 1 tsp. salt

Directions:

  1. Blend together oil, eggs, sugar, carrots, and walnuts.
  2. Add remaining ingredients and mix well.
  3. Baked in a greased and floured 13 x 9 cake pan for approximately 350 degrees for 50 – 60 minutes.

Frosting Ingredients:

  • 8 oz. cream cheese
  • 1/2 cup butter
  • 1 pound powdered sugar
  • 2 tsp. vanilla

Frosting Directions

  1. Mix together until smooth.
  2. Frost the cake when cool.

Carrot Cake with Cream Cheese Filling

The last time I baked a cake was years ago.  I was a little nervous trying to bake again. So, I followed the directions to a T. I also watched YouTube videos to learn how to properly grease/flour the pan and frost the carrot cake.

My husband had a slice after lunch, and he absolutely loves it! Yay! I’m so inspired to bake more yummy goodies.

  1. This looks delicious! I love baking, it’s such a fun way to put your energy into something, and you end up getting something delicious out of it. My tip would be that sometimes (no matter how much skill/practise you have) you will make a mistake, misread or a recipe, or something else will go wrong – my tip is that you should just roll with it and see what improvisation skills you have to get you out of the mistake!

    • I’m glad my friend gave me this recipe. It’s so yummy. I’ve just started this culinary journey, and I’ll be posting more quick and easy recipes as I try to improve my kitchen skills.
